Matcha Daifuku

This traditional Japanese dessert, Matcha Daifuku, is a soft, chewy mochi stuffed with sweet red bean paste. It's a simple and festive treat, perfect for Lunar New Year celebrations or any special occasion.

For Matcha Mochi

7 Tbsp mochiko flour (or sweet glutinous rice flour)

2 Tbsp vegetable oil

4 Tbsp granulated sugar

2–3 Tbsp cornstarch

3 tsp matcha powder

½ cup water

Chilled red bean paste

For Red Bean Paste

6 oz red beans (Azuki beans)

¾ cup sugar

Water

Making Matcha Mochi

In a microwave-safe bowl, combine the mochiko flour, sugar, matcha powder, water, and vegetable oil. Whisk thoroughly until smooth and lump-free.

Steam the mixture for 20 minutes, or cover the bowl with plastic wrap and microwave for 2–3 minutes until the mochi becomes slightly translucent.

Transfer the cooked mochi onto a surface dusted with cornstarch to prevent sticking.

Divide the mochi into five equal portions and flatten each piece into a round disk.

Spoon a portion of chilled red bean paste into the center of each mochi disk. Carefully fold and seal the edges to enclose the filling. Dust with extra matcha powder before serving.

Making Red Bean Paste

Rinse the red beans and soak them overnight in water. They will expand to nearly twice their original size.

Drain and place the beans in a pot. Add water to cover them by about 2 inches. Bring it to a boil over high heat.

Remove from heat, drain, and return the beans to the pot. Refill with water 2 inches above the beans. Bring it to a boil again.

Reduce heat to medium and simmer for 1.5–2 hours, until the beans are soft enough to mash easily.

Drain any excess water, return beans to the pot, and stir in sugar until fully dissolved.

For a chunkier texture, use as is. For a smooth paste, blend the beans in a food processor.

Chill the red bean paste in the refrigerator until ready to fill the mochi.
